Made from raw sheep milk These Semi-Cured Cheeses have PDO (Protected Designation of Origin), as they are made exclusively from Manchega sheep milk. The nuances of these products reflect the Manchegan pastures and the local grasslands, that is, the natural and traditional feeding of the animals.
Minimum ripening of 2 and 3 months Our Semi-Cured Sheep Milk Cheeses have a minimum ripening period of 2 months in the case of Mingolucas, and 3 months in the case of Chisqueros, which, together with our artisanal manufacturing process, gives them a defined and recognisable character.
